Ingredients
Scale
- 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1/2 cup Cowboy Butter (recipe below)
- Fresh parsley, chopped (for garnish)
- 1/2 cup Salted butter, melted
- 2 cloves Garlic, minced
- 1 tablespoon Fresh parsley, chopped
- 1 tablespoon Fresh chives, chopped
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Smoked paprika
- 1/4 teaspoon Red pepper flakes (optional)
- Pinch of cayenne pepper (optional)
Instructions
- Step 1: In a large bowl, toss the chicken cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Step 2: Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until cooked through and lightly browned, flipping occasionally to ensure even cooking.
- Step 3: While the chicken is cooking, prepare the Cowboy Butter. In a separate bowl, combine the melted butter, minced garlic, parsley, chives, Dijon mustard, smoked paprika, red pepper flakes (if using), and cayenne pepper (if using). Whisk well to combine.
- Step 4: Once the chicken is cooked, reduce the heat to low. Pour the Cowboy Butter over the chicken and stir to coat evenly. Cook for an additional 1-2 minutes, allowing the flavors to meld together.
- Step 5: Garnish with fresh parsley and serve immediately over rice, mashed potatoes, or with your favorite sides.
Notes
- Store leftover Cowboy Butter Chicken Bites in an airtight container in the refrigerator for up to 3 days.
- For best results, gently reheat the chicken bites in a skillet over low heat, adding a splash of chicken broth or water if needed to prevent drying.
- Serve these flavorful bites as a crowdpleasing appetizer with toothpicks or as a complete meal over creamy polenta.
- Don't overcrowd the skillet when cooking the chicken; working in batches ensures even browning and prevents steaming, which can result in less juicy bites.
