Delicious cowboy butter chicken bites – juicy, flavorful & the perfect easy dinner idea! πŸ—πŸ§„ recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 cup Cowboy Butter (recipe below)
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup Salted butter, melted
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh parsley, chopped
  • 1 tablespoon Fresh chives, chopped
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Smoked paprika
  • 1/4 teaspoon Red pepper flakes (optional)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Step 1: In a large bowl, toss the chicken cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  2. Step 2: Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until cooked through and lightly browned, flipping occasionally to ensure even cooking.
  3. Step 3: While the chicken is cooking, prepare the Cowboy Butter. In a separate bowl, combine the melted butter, minced garlic, parsley, chives, Dijon mustard, smoked paprika, red pepper flakes (if using), and cayenne pepper (if using). Whisk well to combine.
  4. Step 4: Once the chicken is cooked, reduce the heat to low. Pour the Cowboy Butter over the chicken and stir to coat evenly. Cook for an additional 1-2 minutes, allowing the flavors to meld together.
  5. Step 5: Garnish with fresh parsley and serve immediately over rice, mashed potatoes, or with your favorite sides.

Notes

  • Store leftover Cowboy Butter Chicken Bites in an airtight container in the refrigerator for up to 3 days.
  • For best results, gently reheat the chicken bites in a skillet over low heat, adding a splash of chicken broth or water if needed to prevent drying.
  • Serve these flavorful bites as a crowdpleasing appetizer with toothpicks or as a complete meal over creamy polenta.
  • Don't overcrowd the skillet when cooking the chicken; working in batches ensures even browning and prevents steaming, which can result in less juicy bites.
