- 1 pound pasta, such as rotini or penne
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 cup cooked bacon, crumbled
Instructions
- Step 1: Cook the pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
- Step 2: In a large bowl, whisk together the mayonnaise, sour cream, milk, Dijon mustard, garlic powder, and black pepper until smooth.
- Step 3: Add the cooked pasta and crumbled bacon to the dressing. Stir gently to coat all ingredients evenly.
- Step 4: Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
- Step 5: Before serving, stir the pasta salad and add a little more milk if it seems dry. Serve chilled.
Notes
- To prevent the pasta from drying out in the fridge, stir in a tablespoon or two of mayonnaise before storing.
- Though best served cold, you can bring the salad to room temperature for about 15 minutes before serving to enhance the flavors.
- Serve this pasta salad with a side of fresh avocado slices for added creaminess and healthy fats.
- For an extra smoky flavor, use applewoodsmoked bacon and reserve a little to sprinkle on top just before serving.
