Instructions
- Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil.
- Step 2: Place the chicken breasts in the prepared baking dish. Drizzle with olive oil, salt, and pepper.
- Step 3: In a medium bowl, combine the chopped tomatoes, fresh basil, minced garlic, and balsamic vinegar. Mix well.
- Step 4: Spoon the tomato mixture evenly over the chicken breasts.
- Step 5: Sprinkle the Parmesan cheese over the tomato mixture.
- Step 6: Bake for 30-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Let rest for 5-10 minutes before serving.
