Ingredients
- Salmon fillets: 4 (6-ounce)
- Cajun seasoning: 2 tablespoons
- Olive oil: 1 tablespoon
- Avocado: 1 ripe
- Lime: 2 (juiced)
- Greek Yogurt: 1/4 cup
- Cilantro: 2 tablespoons (chopped)
- Garlic powder: 1/2 teaspoon
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: Pat the salmon fillets dry with paper towels. Brush with olive oil and generously sprinkle with Cajun seasoning, ensuring even coverage.
- Step 3: Place the seasoned salmon fillets on the prepared baking sheet.
- Step 4: Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Step 5: While the salmon is baking, prepare the avocado lime sauce. In a food processor or blender, combine the avocado, lime juice, Greek yogurt, cilantro, and garlic powder. Blend until smooth and creamy. Add a tablespoon of water if needed to reach desired consistency.
- Step 6: Serve the baked Cajun salmon immediately, drizzled with the creamy avocado lime sauce.
Notes
- Store leftover salmon separately from the sauce in airtight containers in the refrigerator for up to 2 days.
- Gently reheat the salmon in a preheated oven at 275°F (135°C) to prevent drying out.
- Serve the baked salmon and avocado lime sauce over a bed of quinoa or rice for a complete and flavorful meal.
- For an extra burst of flavor, let the salmon marinate with the Cajun seasoning and olive oil for 30 minutes before baking.
